1 Tequila Tequila's name is derived from a town in the state of Jalisco, central Mexico. Similar to Champagne in France, tequila may only be produced in the state of Jalisco and limited regions in the states of Guanajuato, Michoacán, Nayarit and Tamaulipas. There are two basic categories of tequila: 100% and mixto. 100% agave tequila must be made from blue agave only, with no added sugars. This is tequila in its truest form. Mixto tequilas are made from no less than 51% agave, with added sugars making up the remainder. Tequila is divided into 2 main categories: Lowland and Highland. Lowland tequilas are more vegetal and herbaceous than those from the highlands Highland tequilas are sweeter and more floral than those from the lowlands Mamasita is proud to stock around 175 varieties of tequila and mezcal, and we are proud to serve 100% agave tequila only! There are 3 main differences between Tequila and Mezcal: 1. Tequila can only be made from agave tequilana (weber variety) aka blue agave. Mezcal is generally produced from any of around 25 different varieties of maguey. Varieties include espadin (sword), cimarron, estoquillo, largo and tecolote. 2. In tequila production the 'piñas' are cooked for hours by high pressure, much like a pressure cooker; resulting in a clean, crisp flavour. For Mezcal, the piñas are roasted, often in pit ovens, for up to 3 or 4 days. These ovens are earthen mounds over pits of hot rocks. This underground roasting gives mezcal its intense, smoky flavour. 3. Mezcal is generally distilled only once, perhaps twice. Tequila is almost always distilled twice, and in some cases 3 times. Mezcal Mezcal is a distilled alcoholic beverage made from the maguey plant (a form of agave), native to Mexico. The word mezcal comes from the Nahuatl mexcalmetl, meaning maguey. The maguey grows in many parts of Mexico, though most mezcal is produced in Oaxaca, southern Mexico. Tequila is a type of mezcal. The majority of mezcal is made from espadin (sword) agave, although interesting varieties including manso, tobala (wild, or silvestre ), madrecuixe aka bicuixe, cuixe, arroqueño, americano, lechuguilla, cenizo and others are becoming increasingly more available. Within 5 years, mezcal sales within Mexico are set to match tequila sales Tequila & Mezcal Flights Mamasita promotes the education of these noble spirits and offers a range of tequila and mezcal flights from some of our favourite houses. Flights consist of 20mls of Blanco, Reposado and Anejo. In some instances we are able to offer 'Suprema' flights, which include the Extra Anejo or Super premium expression of a particular house. Please note that a 10% surcharge is applied to all food & beverage items on Sundays.
2 Blanco (aka Crystal, Plata, Silver) Blanco o Plata ('white') or ('silver') A white agave spirit unaged & bottled, stored immediately after distillation or aged less than 2 months in stainless steel or neutral oak. A clean spirit enjoyed as either a nip shot or to sip on at anytime. We serve blanco tequila with sangrita. We recommend it as an aperitif or mid-meal palate cleanser. Blanco is the drink of choice for tequila purists. 4 Añejo ( Aged or Vintage) Añejo tequila has been aged for a minimum of 1 year but less than 3 years in oak barrels. A darker spirit again with more robust and rich characters enhanced by further oak treatment. We serve añejo tequila in a balloon glass to open up the complexities of these aged tequilas. 6 Mezcal Mezcal (or mescal) is a distilled alcoholic beverage made from the maguey plant (a form of agave), native to Mexico. The word mezcal comes from the Nahuatl mexcalmetl, meaning maguey. The maguey grows in many parts of Mexico, though most mezcal is produced in Oaxaca, southern Mexico. Mezcals tend to have a higher ABV (alcohol by volume) content than tequilas (Tequilas generally sit between 38 40% ABV). Similar to gin, producers say that the higher ABV contributes to and enhances the flavours, characteristics and nuances of the product.
