Tequila. The first distilled spirit on the North American continent is known to most Norte Americanos as a fiery beverage dutifully downed during adolescent rites of passage with salt and lime. Today, Tequila and its grandparent Mescal are fast becoming the newest discovery of the sophisticated dining and drinking crowd. Pulque, Tequila s distant ancestor, may have originated around There are now five regions where Tequila can be legally made, within the northwest part of the country and within 100 miles of Guadalajara. Most are within the state of Jalisco (including the communities of Tequila, Tepatitlan, Guadalajara, Amatitan, Arandas, Arenal, Capilla de Guadalupe, Zapotlanejo and Atotonilico, the rest are in the adjoining states of Guanajuato, Michoacan, Nayarit and the northeastern state of Tamaulipas. The name Tequila may come from the Nahuatl words (work, duty, job or task) and (place). There is still much mystery surrounding the origin of the name Tequila. All Tequilas are clear white when they drip from the cooling coils during the filtering phase, and are correctly called silver, blanco or "plata". Most platas pass directly to the bottling plant, but some producers allow the Tequila to settle and finish for a few weeks in stainless steel tanks before bottling. Some add coloring or herbs which imparts a pale golden color and age for one or two months. These Tequilas are called Gold. Tequila that has been aged 3 to 12 months in wood barrels is called "Reposado" or Rested. The type of barrel used has a dramatic impact on the finished product and produces the subtle nuances that distinguish one Tequila from another. The next level of aging is "Añejo" or Aged. Añejo Tequilas must be aged for at least one year. The year of resting produces a smoother and to some, a more sophisticated taste. The new classification Extra Añejo was approved in 2006 and may extend Tequila beyond the 5-6 year range of aging with projections as long as 10 years of aging. In order to bear the Tequila label the Agave must be grown in the 5 regions, most within 100 miles of Jalisco, and must be fermented from at least 51% Blue Agave. Tequila is Mexico in a bottle, its flavor is as melodic to the mouth as a mariachi tune to the ear - bold, spicy, and full of life!
