4 Knife Safety ALWAYS HANDLE KNIVES WITH CARE! Knives need to be sharp. This means that certain safety rules should be followed while using them. Observe the following tips to avoid injuries! SHARPEN KNIVES REGULARLY. A sharp knife is safer than a blunt knife because it requires less pressure when cutting. It bites deeper into the produce, does not slip easily and is less tiring on the hand. ALWAYS USE THE RIGHT KNIFE. Vegetables, meat, fish, cold cuts and bread vary considerably in size and texture. That is why there is a suitable knife for every purpose. CUT AWAY FROM THE BODY. Always cut away from the body. Thus avoiding injuries if the knife should slip. NEVER TRY TO CATCH A FALLING KNIFE. There is a danger of cutting yourself badly. WASH SHARP KNIVES SEPARATELY. Treat sharp knives with particular care when cleaning them. Never simply throw them into the dishwater. For best results wash them directly after use under running water and dry them immediately. Dry the blade with the cloth folded over the back towards the cutting edge. Never wipe a knife along the cutting edge. KEEP KNIVES AWAY FROM CHILDREN! Keep sharp kitchen knives well away from the reach of children. NEVER RUN YOUR FINGER ALONG THE CUTTING EDGE not even to test it for sharpness! AVOID DIRECT PROXIMITY TO EXTREME HEAT. Never leave a knife on a hot plate or in direct proximity to any source of heat to avoid damages or burns. Using Your Cutlery Before using your Cutlery for the first time, wash each piece using 120 ml (1/2 cup) vinegar in hot, soapy water to remove all manufacturing oils and polishing residues. Rinse and dry thoroughly. Never use knives for anything other than their intended purpose. A knife is not a screwdriver, can opener, box cutter, or any other type of tool and is entirely unsuitable for these purposes. Misuse will damage the cutting edge and can be dangerous. Always use a suitable cutting surface. Even high-quality knives lose some of their sharpness through regular use, but unsuitable cutting surfaces such as porcelain or metal will blunt a knife prematurely. A good cutting surface, such as a wooden cutting board, should be easy to clean and sufficiently pliable. 4

Chopping greens for salads or stirfry, mincing nuts and candies, are easily accomplished by using an even, rocking motion. Slicer (21cm/8¼ blade): The long, flexible Slicer is perfect for carving extra thin, even slices of boneless meats, including roasts, hams, and poultry. Use it to cut thin slices of cake, pastry, and cheese as well. Bread Knife (22cm/8½ blade): Essential knife for cutting perfect slices of all types of breads, bagels, and pastry, large cuts of meats, or even soft fruits and vegetables such as tomatoes. Utility/Sandwich Knife (12cm/4¾ blade): Perfect for such everyday tasks as slicing cold cuts, or cutting sandwiches, fruits, and vegetables. An indispensable tool for those jobs for which the chef s knife is too big or the paring knife is too small. Paring Knife (9cm/3½ blade): Designed to peel potatoes, fruits, and vegetables with ease. Use the sharp point to remove blemishes from fruits and vegetables, eyes from potatoes, veins from shrimp, or to remove the tops of strawberries. It can also be used for creating decorative radish or cucumber rosettes, pickle fans, carrot spirals, and other fancy garnishes. Honing Steel (20cm/7¾ ): Features a high quality chrome plated, grooved surface, which will deliver exceptionally fine honing results to maintain the edge of the knives. 6 Caring for Your Cutlery Care Tips Rena Ware knives are not dishwasher safe. Premium quality knives should be washed by hand immediately after use under hot running water with a little detergent and then dried carefully. If your knives are stored without being properly dried, they can rust. In addition to concerns about rust, it is important to realize that the blades may be damaged when they hit other cutlery or cookware. Good knives are an investment. When properly cared for, your Rena Ware Cutlery will serve you well for many years. Here are some useful guidelines for caring for your Rena Ware Cutlery. Always clean by hand. Your Rena Ware Cutlery should be cleaned by hand immediately after each use. Simply hold the blade under warm running water and wipe with a soft cloth. If necessary, add a little dish washing liquid and dry immediately from the back towards the cutting edge. Rinse off acids (e.g. from fruit and vegetable juices, mustard, ketchup) from the blade immediately after use. Stubborn stains can be removed with a standard non-abrasive metal cleaner. Storage Always store knives safely. Your Rena Ware Cutlery comes with a bonus Knife Block for safe, convenient storage. Knives need a safe storage place to prevent injuries and protect the blades from damage. A knife block is the perfect answer to both requirements. Clean your knife block regularly with a damp cloth or sponge (non-abrasive) and dry with a towel. TIP Use the back edge of the knife (not cutting edge) to push food from the cutting board into a utensil or bowl. 6

7 Keeping Your Knives Sharp Keep your knives sharp! Even a good knife will lose some of it s sharpness over time. The edge of a quality knife does not wear away; it folds over on itself. A knife-edge is microscopically thin much thinner than a human hair. The impact of cutting causes the edge to fold over on itself. Pieces of the edge may even break off. Maintaining the edge is easy if you have the right tool and know how to use it. Your cutlery set comes with a top quality chromium plated, grooved surface Honing Steel that will deliver exceptionally fine results. Note: Do not use the Honing Steel on the Bread Knife or any other serrated knife. Follow these steps each time you use your knife to maintain a sharp edge. How to maintain your knife edges; 1. Place the knife blade against the base of the Honing Steel, near the handle. The blade should be at a 20 angle to the Steel with the cutting edge facing you.the blade is at a 20º angle when the back of the blade is 16mm (a little thicker than your thumb) from the steel. 2. Pull the knife away from your body and across the steel, describing an arc. 3. Repeat this action on the back of the steel to sharpen the other side of the blade. 4. Repeat steps 2 and 3 five to 10 times, alternating the left and right side of the blade It is very important to maintain the angle of 20 and to run the full length of the cutting edge along the steel from the hilt to the tip of the knife. Speed of movement plays no part in this action so take your time to ensure you have run the full length of the edge along the steel. Never draw the cutting edge of the knife blade towards you and make sure the tip of the knife is falling away from your body. The Honing Steel does not sharpen; it maintains the edge. Using a steel requires significant skill and practice. To be effective at all, the steel must be used after every 10 to 50 cuts. True sharpening removes the old weak edge and reshapes a new stronger edge and should be preformed by a professional knife sharpener. Mantener el filo es tarea sencilla si tiene la herramienta adecuada y sabe cómo utilizarla.
