Knives need to be sharp. This means that certain safety rules should be followed while using them. Observe the following tips to avoid injuries! SHARPEN KNIVES REGULARLY. A sharp knife is safer than a blunt knife because it requires less pressure when cutting. It bites deeper into the produce, does not slip easily and is less tiring on the hand. ALWAYS USE THE RIGHT KNIFE. Vegetables, meat, fish, cold cuts and bread vary considerably in size and texture. That is why there is a suitable knife for every purpose. CUT AWAY FROM THE BODY. Always cut away from the body. Thus avoiding injuries if the knife should slip. NEVER ATTEMPT TO CATCH A FALLING KNIFE. cutting yourself badly. There is a danger of WASH KNIVES SEPARATELY. Using Your Cutlery Before using your cutlery for the first time, wash each piece using 120 ml (1/2 cup) vinegar in hot, soapy water to remove all manufacturing oils and polishing residues. Rinse and dry thoroughly. Never use knives for anything other then their intended purpose. A knife should never be used as a screwdriver, can opener, box cutter, or any other type of tool and is entirely unsuitable for these purposes. Misuse will damage the cutting edge and can be dangerous. Always use a suitable cutting surface. Even high-quality knives lose some of their sharpness through regular use, but unsuitable cutting surfaces such as porcelain or metal will blunt a knife prematurely. A good cutting surface, such as a wooden cutting board, should be easy to clean and sufficiently pliable. 4 5

Rena Ware Z Series Prep Knives Made in the same style as the Cutlery Set, using the same molybdenum/vanadium steel blades, and ABS handles, the Prep Knives consist of 4 knives perfect for portioning cuts of meat, poultry, or fish from larger, less expensive cuts. Each set includes the following knives. Meat Cleaver (15.5cm/6 blade): Designed to cut through bones and joints, the meat cleaver is the best choice for tough cutting jobs, including cutting frozen foods, that would easily damage lesser blades. Slicer (20.5cm/8 blade): The long, flexible Slicer is perfect for carving extra thin, even slices of boneless meats, including roasts, hams, and poultry. Use it also to cut thin slices of cake, pastry, and cheese. Butcher Knife (18cm/7 blade): The shape of the butcher blade is ideal for portioning steaks or chops from larger cuts of meat, removing the breast meat from a turkey, or even filleting huge fish like swordfish or tuna. Paring Knife (9 cm/3.5 ): Designed to peel potatoes, fruits, and vegetables with ease. Use the sharp point to remove blemishes from fruits and vegetables, eyes from potatoes, veins from shrimp, or to remove the tops of strawberries. It can also be used for creating decorative radish or cucumber rosettes, pickle fans, carrot spirals, and other fancy garnishes. Boning Knife (14cm/5 ½ blade): Similar in appearance to the fillet knife, this knife is made for working around bones, between muscle groups, and under gristle and silver skin. This short narrow blade allows you to easily work within a cut of meat to remove the less desirable portions. 5 EN Caring for Your Cutlery Good knives are an investment. When properly cared for, your Rena Ware Cutlery will serve you well for many years. Here are some useful guidelines for caring for your Rena Ware Cutlery. Rena Ware knives are not dishwasher safe. Premium quality knives should be washed by hand immediately after use under warm running water with a little detergent and then dried carefully. If your knives are stored without being properly dried, they can rust. In addition to concerns about rust, it is important to realize that the blades may be damaged when they hit other cutlery or cookware. Rinse off acids (e.g. from fruit and vegetable juices, mustard, ketchup) from the blade immediately after use. Stubborn stains can be removed with a standard non-abrasive metal cleaner. Storage Knives need a safe storage place to prevent injuries and protect blades from damage. Always store knives safely. Your Rena Ware Z Series Cutlery Set comes with a knife block that keeps your knives safe and allows for easy access. Keep your knife block clean by wiping with a damp, non-abrasive cloth or sponge and dry with a towel. The Z Series Prep Knives should be stored in the included storage packette. The packette has a slot for each knife in the set and folds flat for storing in smaller spaces. Always thoroughly dry knives before storing. Keeping Your Knives Sharp Using the Rena Ware Knife Sharpener The Rena Ware Knife Sharpener is equipped with two sharpening slots. The slot closest to the handle (Slot #1) is equipped with carbon steel sharpening blades and is used to restore the shape of the edge. Slot #1 should be used only when Slot #2 does not sharpen the knife. Slot #2 is equipped with two circular ceramic sharpening blades that can be rotated if a portion begins to show wear. To sharpen: 1. Place sharpener on a flat surface and insert the blade into slot #2. 2. Position the blade so it is perfectly vertical. IMPORTANT: If the blade leans to either side, or is pulled through the sharpener at an angle, the blade will not sharpen properly. slot #1 3. Start with the heel of the blade in the sharpening slot and pull all the way through the tip. Note: If you sharpen only part of the slot #2 blade, you will ruin the geometry or shape of the blade, and it will not work properly. Draw the knife through 3-4 times until it is sharp. 4. If sharpening with the #2 slot does not sharpen the blade adequately, repeat step three above using the #1 slot. NOTE: Do not sharpen the bread knife or any other serrated edge knife in the sharpener.
