Durante mi formación, una noche estaba sustituyendo al chef de nuestra casa bordelesa, el Château de Suduiraut, y puse la salsa que era para el entrante (salsa de Sauternes) en el plato principal, lubina salvaje... Me entró el pánico, no sabía qué hacer y, de repente, la pareja me dijo que los participantes querían que fuera al comedor... Estaban esperándome y se levantaron todos para aplaudirme!
