10 Cómo será la comida del futuro? 5 Lee este artículo. Read this article. Cada año la población mundial crece. Si el ritmo continúa, en 2050 habrá 9 mil millones de habitantes en la Tierra y algunos países doblarán su volumen, lo que hace probable una escasez de alimentos. Por eso, hay que encontrar nuevas formas de producir comida. En la actualidad los animales son la principal fuente de proteínas para los humanos, pero los insectos son una fuente alternativa prometedora y económicamente viable. A diferencia de los animales, los insectos requieren menos agua, menos espacio y menos energía, y generan un menor volumen de contaminantes. Casi cualquier tipo de insectos es comestible: las hormigas tienen un sabor avinagrado (esto se reduce al cocinarlas); los grillos saben a pollo; algunas arañas tienen abundante carne blanca, de un sabor parecido al salmón. Los japoneses comen insectos como parte de su dieta desde tiempos antiguos. Esta práctica probablemente empezó en una región con una gran población humana y poca proteína animal. Si fueras a un restaurante en Tokio, probablemente podrías probar alguno de los platillos preparados con insectos. Qué ironía!: en el Oeste hemos perdido mucho tiempo temiendo que los insectos nos cayeran en la comida y ahora se nos recomienda comerlos! Los expertos no sólo están desarrollando la comida del futuro, sino el embalaje en que se venderá. Especialistas de la Universidad de Harvard han diseñado embalajes comestibles a base de chocolate, nueces o cereales.
