1 SUPPORT SERVICES To: All Principals All Food Service Managers Approved by: Dave Cline Contact Person: Serena Suthers SUPPORT SERVICES Spring Break Refrigerator/Freezer Checks This notice remains in effect until April 18, School cafeterias have a need to carry food items over the Spring Break. It is necessary to protect the quality of this food by insuring that it is stored at the proper temperature. Food service managers will not be at work April 14-18, April 14-16, 2014, are, however, workdays for 12-month employees. Therefore, School Food and Nutrition Services is requesting the principal of each school appoint a member of the custodial staff or security resident to check the temperature gauges of the refrigerators and freezers in the cafeteria prior to 9 a.m. on these days. School Division employees are not scheduled to work on April 17 and 18, For these days please include the cafeteria refrigerators and freezers in the regularly scheduled building checks that are planned for your building security needs. The food service manager shall brief the person given this responsibility, indicating exactly which freezer(s) and refrigerator(s) in the kitchen contain food, how to read the temperature gauges on these units, the defrost cycle of the units, and how to check for operation problems if the freezer or refrigerator is not equipped with a temperature gauge. If the temperature of a refrigerator rises above 40 degrees F. and stays at that level for longer than one hour, the problem should be reported. If the temperature of a freezer rises above 10 degrees F. and stays at that level for more than one hour, the problem should be reported. Report problems found during working hours to one of the following: School Food and Nutrition Services Facilities Management Services If a problem is identified during non-duty hours, contact a member of the Facilities Management Emergency Duty Response Team.
