El texto consta de tres partes. Los alimentos americanos en Europa I. A Posiblemente el principal aporte cultural de la antigua cultura aymara a la humanidad sea la domesticación de la papa. Cuando los españoles conquistaron el imperio inca encontraron la papa cultivada y consumida en todo su territorio. Sin embargo, en la meseta del Titicaca, como en ningún otro lugar, encontraron más de 200 variedades. Los españoles más tarde la llamarían patata, por una confusión con el nombre de la batata B Los antiguos aymaras también fueron pioneros en inventar la técnica de deshidratación de la papa, con fines de almacenaje. Esta papa deshidratada es obtenida y consumida masivamente hasta el día de hoy, y es conocida como chuño. Dependiendo del procedimiento particular usado, puede tener otros nombres: tunta, muraya, etc. Esta técnica de deshidratación de la papa se basa en el aprovechamiento de las condiciones climáticas de los 4000 metros de altura de la meseta del Titicaca. La papa se expone durante dos semanas a los ardientes rayos solares diurnos y a los intensos fríos nocturnos. 10 C La papa fue el alimento americano que más éxito tuvo en Europa. En 1564, John Hawkins introdujo la batata en Inglaterra, pero no prosperó. En cambio, la papa, que había sido cultivada por los laboriosos agricultores incas en sus gélidos montes, tuvo un éxito casi instantáneo. Introducida en Inglaterra por Sir Walter Raleigh, e implantada en la recién desarrollada colonia inglesa de Irlanda, le esperaba a la papa un futuro brillante en las Islas Británicas hasta mediados del siglo XIX The sweet potato. Comparado con el Perú, el Reino Unido tiene un clima tan cálido que la única manera de cosecharlas es cultivándolas en las regiones más frías del país: Irlanda del Norte y Escocia. Llamada a desarrollarse en un clima mucho más caluroso del que había prescrito la naturaleza, la papa británica estaba expuesta a enfermedades que probablemente no le habrían afectado jamás en el altiplano andino. 25 E Existían poderosas razones para que los campesinos europeos, ya de por sí obstinados y recelosos, contemplasen la papa con prevención, y se lo pensasen dos veces antes de adoptar su cultivo. Por lo tanto, su expansión al principio fue lenta. En Francia, Antoine-Auguste Parmentier, filósofo francés del siglo XVIII (y al que se le atribuye el invento de las papas fritas), intentó convencer a sus paisanos de que la papa no era venenosa. (Las papas verdes sí son venenosas, hasta cierto punto.) Sin embargo, Parmentier logró interesar al rey, y fue Luis XVI quien finalmente «engañó» a los campesinos para que cultivasen el nuevo tubérculo. Hizo que se sembrase un campo de papas en las mismas afueras de París, y puso una guardia de soldados alrededor de este campo real. Los campesinos se acercaron a curiosear, y se preguntaban cuál sería ese cultivo tan valioso que aconsejaba todas esas medidas de seguridad. Finalmente, cuando la cosecha estuvo lista, el rey retiró la guardia nocturna, y esperó. Al cabo de poco tiempo, y por la noche, todas las papas habían sido robadas y la carrera de la papa se había puesto en marcha. Todavía hoy, la inclusión en un plato del calificativo a la parmentier, indica que se sirve acompañado de papas F En otra parte de Europa la papa prosperó mucho mejor. Federico el Grande la introdujo en Alemania, donde tuvo tal aceptación que la guerra de sucesión bávara (1778-9) giró en realidad en torno a quién había de controlar la cosecha de papa local. Los rusos también se contagiaron de esta moda, comprobando que el tubérculo se desarrollaba muy bien en sus frías estepas. En Holanda, hoy, cuatro de cada cinco verduras y hortalizas que se cultivan son papas. 45 II. G La papa contiene un 63 por ciento de humedad, 28 por ciento de carbohidratos, 4,6 por ciento de proteínas, 3,5 por ciento de fibra y 1 por ciento de grasa, además de contener la mitad de la vitamina C que requiere un adulto diariamente. 50 H I Hay tres tipos de papa: la silvestre, no comestible y que se usa para mejorar o crear variedades; las nativas o cultivadas, seleccionadas por el hombre; y las mejoradas o comerciales que son manipuladas genéticamente en laboratorios y con cualidades específicas de acuerdo al mercado. Según el Centro Internacional de la Papa (CIP), cuya sede está en Perú, en su banco genético se guardan más de 12 mil variedades, entre nativas, mejoradas y silvestres, para muestras de investigación. 55 J Asimismo actualmente existen variedades de papa nativa en América Latina, de las cuales son peruanas.
