M ost food writers are generalists. The difference between pork belly and pancita is as important as knowing a tart from a pie. Two years ago, Texas Monthly created an unprecedented position with a bit more focus. They gave me the official title of barbecue editor, and I eat brisket like it s my job. Every few years, Texas Monthly creates a new list of the Top 50 barbecue joints in Texas. The most recent was released in June Since then I ve traveled tens of thousands of miles checking up on the pitmasters represented in the current list and searching for the new joints and the hidden gems that are the hopefuls for the next one. The travel can be exhausting, but I never want for exploration, and I certainly don t go hungry. The barbecue options in the capital city abound, but Texans love to get out of the city too. The rural- barbecue road trip is a rite of passage and a popular weekend sport. A few hundred miles on Saturday is commonplace, but there s plenty of incredible smoked meat within an easy drive of the Austin airport, from which American offers a slew of regional flights. FERREIRA the PLATINUM LIST Hotels Resorts Fine Dining Nightlife Style And Relax The fruits of the Earth and sea take pampering to a whole other level at three new spas BY KIMBERLEY LOVATO A LIGHT BED BREAKFAST Automation has made the lighthouse keeper extinct but created the ultimate in romantic seaside accommodation there has always been an air of romance about lighthouses. It s their role as beacons in the dark, there to guide sailors out at sea and provide safe passage home. Then there are the keepers, dedicated men and women maintaining solitary vigils, with only the temperamental weather and wheeling seabirds to color their existence. Except these days, technology has rendered the role of the keeper obsolete, replaced by automation. Many of the lighthouses they once tended have been sold off and have passed into the hands of new kinds of keepers. Some of these have chosen to open up their lighthouses to paying guests, making for some highly unusual guesthouse experiences. Here are four we like. SCENE STEALER An interior designer to the stars is full of down-to-earth advice there s a magic that happens in front of the camera; an adrenaline rush that comes from an awareness that all eyes are on you. But for former actress turned interior designer Kari Whitman, it wasn t enough. She didn t want to just show up on set; she wanted to be the one creating it. I always had an affinity for design, she says. As a kid, when I went on vacations with my parents, they would go down to the pool, and by the time they returned, I would have rearranged the furniture in the hotel room. With roles in TV shows including NYPD Blue, Nash Bridges and Married With Children, she picked up work doing interiors for some of her co-stars, which rapidly turned into a thriving design practice with Hollywood clients like Emilio Estevez, Don Henley, Kristen Bell and Jessica Alba. How would you describe your design aesthetic? Personally, I d say my style is eclectic, innovative and artistic, but I m not always designing for myself. I think each person s home should be a reflection of his or her own personality, not mine. It s about self-expressionism, which is why you ll never walk into an interior I ve worked on and say, This is a Kari Whitman home. That s not what I want. I want it to look like a Virginia Madsen house or a Melanie Griffith house. If anything, my design ethos isn t so much about an aesthetic as it is being a good listener. What are the biggest trends you re seeing in interiors right now? Maybe it s because I m a total tree hugger or because of my upbringing in Boulder, Colorado, but I ve been celebrating the growth of the green movement in interiors in recent years. A lot of my clients have been asking what they can do to reduce their environmental footprint, and even when they re not eco-conscious I do my best to educate them on the options. There are so many incredible new products out now to explore. For example, I recently did a wallpaper installation for a royal family that was made out of old blue jeans, and it s just about one of the most gorgeous things I ve ever seen. Can you share some small steps people can take to get greener homes? The most valuable thing you can do is a little bit of extra research. 22 In every issue Bed, Board LEgends By ANDREW HUMPHREYS THE BEST OF BRITISH For more than 100 years, London s Savoy has attracted a who s who of Hollywood greats, royalty and celebrities anybody who knows London s hotels has their favorite Savoy story. Mine involves the Irish actor Richard Harris, who in his later years moved into a suite at the hotel an arrangement he declared better than marriage. He was a legendary drunk whose real-life exploits put his screen characters in the shade, but overindulgence (and lymphatic cancer) caught up with him, and a visiting ex-wife was shocked to find him emaciated, weak and near death. An ambulance was called, and as he was carried through the lobby on a stretcher, Harris sat up and shouted (as a joke), It was the food! Don t touch the food! The Savoy subsequently named a suite in his honor. Harris star power, however, was not sufficient to earn him a spot among the starry parade of signed photographs that lines one of the plushly carpeted halls off the Front Hall, or for him to be commemorated in the hotel s archive, the Savoy Museum. We ll come back to those celebrities in a moment, but let s just pause here to consider that museum: How many hotels boast their own museum? Then again, how many hotels can boast a pedigree to match that of the Savoy? It was the first luxury hotel built in Britain (framed in the museum is the first coin taken at the hotel, spent by an American, Harry Rosenfeld, in August 1889 on a bottle of Champagne). It was a pioneer in being entirely lit by electricity, including some of the country s first electric ascending rooms (now known as elevators). It also had an unheard-of 70 bathrooms (for 200 guest rooms); for comparison, its closest rival offered just four bathrooms for its 400 guest rooms, which led the builder to ask the Savoy s developer if he expected his guests to be amphibious. The man responsible for all the opulence and faucets was Richard D Oyly Carte, a theater impresario who made his fortune producing operettas by his friends Gilbert and Sullivan. He first built the Savoy Theatre before deciding to accessorize it with a glitzy hotel next door. He headhunted waiter-turned-hotelier César Ritz to be the Savoy s general manager and the esteemed chef Auguste Escoffier to oversee the kitchens (although his lack of height meant he had to wear platform shoes to oversee pans at the back of the range).
