La comida peruana es una de las cocinas más diversas del mundo, incluso han llegado a decir que la cocina peruana compite con cocinas de alto nivel como la francesa y china. La comida peruana es de gran diversidad gracias al aporte de diversas culturas como la española, italiana, francesa, china, japonesa, entre otras, originando de esta manera una fusión exquisita de distintos ingredientes y sabores que dieron lugar a distintos platos de comida peruana. A este aporte multicultural a la cocina peruana, se suman la diversidad geográfica del país (el Perú posee 84 de las 104 zonas climáticas de la tierra) permitiendo el cultivo de gran variedad de frutas y verduras durante todo el año. Asimismo el Perú tiene la bendición de limitar con el Océano Pacífico, permitiendo a los peruanos el consumo de diversos platos basados en pescados y mariscos. La comida peruana ha venido obteniendo un reconocimiento internacional principalmente a partir de los años 90 gracias al trabajo de muchos chefs que se encargaron de difundir la comida peruana en el mundo y desde entonces cada vez más gente se rinde ante la exquisita cocina peruana. Si bien es cierto que el cebiche es un plato que se prepara en muchos países latinoamericanos, sobre todo los litorales al Océano Pacífico como Chile, Ecuador, El Salvador, México, entre otros; en el Perú es considerado un plato tradicional y es tan valorado por la población peruana que incluso ha sido declarado Patrimonio Cultural de la Nación por el gobierno peruano. Es más, tanto es la importancia de este conocido plato en el Perú que en el año 2008 fue instaurado el Día del Ceviche, celebrado cada 28 de junio a nivel nacional. La preparación básica del cebiche es pescado blanco en trozos, jugo de limón, cebolla roja, ají y sal a gusto pero se pueden agregar otros ingredientes de acuerdo al gusto de cada uno. En el Perú se preparan varios tipos de cebiche, como el cebiche mixto (se le agregan mariscos o pescados al cebiche normal); cebiche de conchas negras, plato típico de la zona norte del Perú hecho a base de conchas negras marinado con limón; cebiche de pulpo, entre otras variaciones. Los acompañamientos del cebiche varían dependiendo de la región, sin embargo los acompañamientos más comunes son el choclo, cancha serrana, camote, yuyo y hojas de lechuga. Y por si se están preguntando que bebidas caen bien con este plato, pues una cerveza bien helada. Espero que si alguno tiene la oportunidad de ir a Perú o comer en un restaurante peruano no se olvide de pedir un cebiche, pues se podría decir que sería un pecado no comer este delicioso plato sobre todo si te encuentras de viaje por la costa peruana. 12 Spanish Bebidas tradicionales En el Perú tenemos diversas bebidas que suelen acompañar nuestras comidas. Una de las bebidas de mayor consumo a nivel nacional es la chicha morada. La chicha morada es un refresco que se prepara a base de maíz morado hervido al cual se le suele agregar trozos de piña, azúcar, membrillo, jugo de limón y canela. Este refresco es originario de la zona andina de mi país, sin embargo como mencioné al principio, en la actualidad es consumido a nivel nacional. Además de tener un rico sabor, la chicha morada posee propiedades beneficiosas para la salud. Entre sus propiedades se destaca que baja la presión sanguínea y el colesterol, entre otros. El consumo de chicha morada a nivel nacional ha crecido tanto que incluso su consumo ha alcanzado al de la Coca Cola. Es posible encontrar esta bebida casi en cualquier sitio gracias a la venta de chicha morada en botellas o latas, cosa que antes no se solía dar. Otra bebida nacional es la Inca Kola. Esta bebida gaseosa es originaria del Perú cuyo principal ingrediente es la planta hierba luisa. Sin embargo su fórmula se mantiene en estricto secreto. Esta gaseosa de color amarillo y sabor dulce es una de las dos únicas gaseosas en el mundo que ha podido superar en ventas a la Coca Cola en su país de origen. 16 Bebidas Alcohólicas Peruanas Spanish Una de las cosas que normalmente me preguntan cuando conozco gente de otros países es qué bebidas alcohólicas tomamos en el Perú. Por eso esta semana les voy a contar sobre los licores peruanos. El licor nacional del Perú es el pisco, el cual es elaborado a partir de la uva. La elaboración de este licor empieza en marzo de cada año cuando las uvas son cuidadosamente acopiadas en los viñedos de la costa peruana. El pisco puede ser elaborado a partir de dos variedades de uva locales, la uva quebranta y la uva Italia. Existen cuatro variedades de pisco en el Perú, dependiendo de las uvas utilizadas para la elaboración de este licor, así como también el proceso de destilación con el que se lleva a cabo. Estas cuatro variedades son el pisco puro, mosto verde, acholado y aromático. El pisco puro se caracteriza por su fina destilación y que se prepara de una sola variedad de uva. El pisco mosto verde es elaborado por mostos frescos incompletamente fermentados. El pisco acholado es el de mayor grado alcohólico y es elaborado con diferentes variedades de uva. Este pisco es el que normalmente se usa para la elaboración del pisco sour, bebida nacional peruana. Finalmente el pisco aromático es el pisco elaborado de uvas pisqueras aromáticas. 2 Al igual que el cebiche, el pisco también tiene un día especial reservado en el calendario peruano. 20 Spanish El chifa El chifa es una de las comidas más populares entre los peruanos y nació de la fusión entre la comida de los inmigrantes chinos principalmente de la zona de Cantón y la comida peruana. Los chinos empezaron a llegar al Perú en el año 1849 y desde entonces poco a poco fueron insertándose a la sociedad peruana. Conforme iban asentándose y progresando económicamente en el Perú, los chinos comenzaron a importar productos de su país así como también empezaron a sembrar sus verduras para que ningún ingrediente les faltara al momento de preparar sus platos. 2 Los restaurantes en donde se vende esta comida, son conocidos también por el mismo nombre, chifa. El primer chifa inaugurado en la ciudad de Lima fue en el año 1921 y desde entonces los peruanos podemos saborear esta deliciosa comida resultado de la fusión china-peruana en casi todo el país. Se calcula que en la actualidad, sólo en la ciudad de Lima existen unos cinco mil chifas. La influencia de los chinos en la cocina peruana es tal, que incluso dicen que conocidos platos criollos como el tacu tacu y el lomo saltado fueron influencia de los chinos. Asimismo las amas de casa comenzaron a utilizar el jengibre, sillao, cebollita china, entre otros ingredientes, en la preparación diaria de las comidas. El chifa en el Perú se acopló en todos los estratos socio-económicos de la sociedad ya que se pueden encontrar tanto los chifas de alto nivel como los populares chifas de barrio. El chifa en el Perú tiene un sabor distinto al de la comida china de otros países por lo que si estás de visita en el Perú no te olvides de visitar un chifa que te aseguro que te va a encantar esta deliciosa comida. En esta nueva entrada les hablaré un poco sobre los postres peruanos. Los inicios de la repostería tradicional peruana datan desde la época colonial, etapa en la que se introdujo el cultivo de caña de azúcar y costumbres europeas. Algunos de los postres más populares en el Perú son el arroz con leche, mazamorra morada, picarones, entre otros. El arroz con leche es un postre típico que se prepara en muchos países y se prepara cociendo lentamente el arroz en leche y azúcar. Se le suele añadir canela o vainilla y se puede comer frío o caliente. La mazamorra morada es un postre hecho a base de maíz morado. Una porción de mazamorra morada servida en partes iguales junto con el arroz con leche en un mismo recipiente se le conoce como clásico. Los picarones están hechos a base de masa de harina de trigo mezclada con zapallo, se fríe en forma de anillo y posteriormente se añade una salsa de miel de chancaca y naranja al momento de servir.
